White Bean Pate
Ingredients
- 1 Tbsp canola oil
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1-pound can cannellini or white kidney beans
- juice of 1/2 lemon
- 1/4 cup parsley
- 1 Tbsp soy sauce
- 1/4 teaspoon thyme
- 1/4 teaspoon dried basil
- 1 teaspoon cumin
- pepper to taste
Instructions
Heat oil over medium heat. Saute onion and garlic, covered, until golden (about 7 minutes). Combine onion and garlic with all of the remaining ingredients in a food processor. Process until smooth. Makes a good spread for crackers or crostini. Serves 6.
