"Blueberry shrub syrup is a shrub syrup drinking vinegar which preserves fresh in season blueberries by infusing them with thyme, lemon, cinnamon, coriander, low GI cane sugar and coconut vinegar. Blueberry shrub syrup offers a delicious and complex flavour base for refreshing drinks. cocktails and desserts. Shrub syrups are an old fashioned way of preserving in season produce with a 1:1:1 ratio of fruit or vegetable: vinegar: sugar. My modern interpretation uses vinegar for preservation but reduces the sugar for a lower sugar syrup that is packed with flavour from sweet spices like cinnamon, has the benefits of probiotics from vinegar and antioxidants from blueberries. Blueberry shrub makes a healthy refreshing drink with crushed ice and soda water and is a complex flavouring and souring agent for cocktails such as an improved blueberry shrub with a port float or a blueberry shrub pisco sour cocktail. "
