Iced Latte with Homemade Cinnamon Syrup
"This recipe walks you through making your own cold brew coffee which can be used as the base for any iced coffee drink. It also shows you how to create your own cinnamon syrup from scratch. I've combined the cold brew coffee and homemade cinnamon syrup with some dairy free milk to make this delicious iced cinnamon latte. Pour the cold brew over the ice, add in the cinnamon syrup and top up with the milk of your choice."

Ingredients
- 50 grams ground coffee
- 500 milliliters cold water
- 50 grams brown sugar
- 1 teaspoon ground cinnamon
- 50 grams honey or maple syrup
- 60 milliliters water
- 125 milliliters cold brew coffee
- 2 tablespoons cinnamon syrup
- 125 milliliters dairy free milk
- 1 tablespoon crushed ice

Start by making the cold brew - Place the ground coffee and water in a jar and leave at room temperature for 8 hours. Strain the coffee using a fine sieve or a French press. Store in the fridge until you are ready to use.

Make the cinnamon syrup next - Place the brown sugar, cinnamon, honey and the 60ml of water in a saucepan over a medium heat. Cook, stirring occasionally, until well combined, about 5 minutes. Remove from the heat, allow to cool and then store in an airtight jar in the fridge.

Make the drink by pouring the 125ml of cold brew into a large glass, stir in the 2 tablespoons of cinnamon syrup, pour in the 125ml of dairy free milk and top with crushed ice.
