I love the versatility of this Ham and Cheese Mini Quiches recipe. Once you have the "batter" you can choose whatever fillings you desire. I like that it makes a large quantity, I think I got over forty from one batch. I'm going to make them again for an Easter breakfast we are having this year. The large batch will let me make them with a variety of different fillings.

These mini quiches are really cute and the ham filling is a great idea. I've never come across quiches with any form of meat before, only vegetable additions. While I like vegetables, the flavor of baked meat is nice from time to time. Plus, the meat does indeed make for a more filling item compared to vegetables.

I make these mini cheese quiches for my son's lunchbox all the time. He is 12 and won't stop eating at the moment. I can't feed him enough. These quiches are prefect as they are quite filling. What I also like about them is that you can add in pureed vegetables (such as squash) and they don't even know!
