Catfish Vera Cruz
Ingredients
- 4 fillets of Catfish
- Cajun Seasoning
- 3/4 cup salsa
- 1/4 cup dry white wine
- 3 Tbsp sliced green olives
- 1 Tsp cummin
Instructions
Sprinkle both sides of fish with Cajun Seasoning to taste and either grill, bake or pan fry in non-stick fry pan until flakes (approx 5 minutes on each side.) Meanwhile, make sauce with remaining ingredients. Heat and spoon over fillets when served.
