Risotto is one of those fabulous comfort foods that just warms my heart and soul! This one looks so elegant and flavorful! I have never seen that frozen seafood blend you mentioned at the stores where I shop, so I will probably use a mixture of fresh shrimp and clams from the seafood counter. I think I'll add them later in the cooking process since they cook very quickly, and I don't want them to become tough.

My dad's favorite dish to order out at a seafood restaurant is risotto. I have actually never made risotto because I never think that I will make it good enough! My friend's dad is a chef and he always makes the best risotto so I am not sure I can compete with that but this recipe looks like a great one to try!
