Crispy Baked Orange Roughy
Ingredients
- 1 lb. orange roughy or other white fleshed fish filets
- 1 egg, beaten
- 1/4 cup dry bread crumbs
- 1/4 cup grated parmesan cheese
- 1 teaspoon grated lemon peel
- 1 teaspoon lemon pepper
- 2 cloves garlic, minced
Instructions
Cut fish into serving-size pieces. Beat egg in small shallow bowl. Combine remaining ingredients in second shallow bowl. Dip fish into egg and then into crumb mixture, coating completely. Place on foil-lined baking sheet tucking tail under if needed. Bake at 450 degrees F oven for 6-8 minutes or until fish flakes easily with fork.

Our family is a family of fish eaters. Orange Roughy is a delicious white fish that is not "fishy" tasting. Although, I have trouble finding it in our grocery store now, I can get it at the farmers market. The price is much higher than it used to be, but once you try it....you will see that it is worth it. I have used it in fish taco recipes also. This recipe looks divine. Crispy and baked? A dream come true!
