Halibut in Caper Cream Sauce

Ingredients

  • 2 8 oz. 1" thick halibut steaks
  • 1 Tbsp. butter
  • salt and pepper
  • 1/4 cup slivered almonds
  • 1 Tbsp. butter
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1/2 cup milk
  • 2 Tbsp. sherry
  • 1/2 cup sour cream
  • 2 Tbsp. fresh lemon juice
  • 2 Tbsp. capers, drained parsley lemon slices

Instructions

Preheat oven to 450. Arrange halibut in individual au gratin dishes or a baking dish. Melt butter and brushover halibut, season to taste. Bake at 450F for 20 minutes. Melt butter, add almonds and saute until golden, approximately 10-15 minutes. Keep warm. Melt butter over medium heat, whisk in flour, and cook for 2 minutes. Whisk in milk, stirring constantly until thickened. Remove from heat. Blend in sherry, sour cream, lemon juice, and capers. Pour over fish. Garnish with sauteed almonds, parsley, and lemon slices.
