Lemon Garlic Baked Shrimp Recipe [Paleo, Keto]
"If you enjoy shrimp, then give this simple recipe a try. It’s Paleo and low carb/Ketogenic. The sauce that comes with this recipe is a lemon garlic ghee sauce that is really easy to make. The shrimp is dipped in the sauce and then the dish is served with extra sauce. If you haven’t tried it before, lemon, garlic, and ghee goes really well together, so make sure to keep some of the sauce to serve with. If you’d prefer not to bake the skewers, you can also grill the vegetables and the shrimp. Personally, I find firing up the grill a bit of a hassle, so I prefer to use the oven. Also, feel free to use whatever vegetables you have available instead of the ones I used for this recipe."

- 1 lb (450 g) shrimp, peeled and deveined
- 8 cloves garlic, minced
- 1/2 Tablespoon lemon juice
- 2 Tablespoons ghee
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 bell peppers, chopped
- 4 mushrooms
- 1 zucchini, chopped

Preheat oven to 400F.

In a bowl, melt the ghee, then add in the minced garlic, salt, and pepper. Divide the mixture in half – save one half of the mixture for serving with.

Dip each shrimp in one half of the mixture and put on skewers.

Place the chopped bell peppers, mushrooms, and zucchini slices on skewers.

Place the skewers on a baking tray and cook the skewers approximately 5 minutes on each side.

Serve with the saved garlic ghee mixture.
