When I first started cooking I always used to over cook fish because I could not believe that it could cook in so short a time, lol. Eventually the penny dropped and I started to shorten the cooking time and so preserve the wonderful flavors. This lovely, basic Honey Baked Salmon dish with veg is a great example of how little time fish actually needs in the oven. Do give it a try because it is really very good!

I love Salmon. You have to cook it right and I find baking it is always best to avoid overcooking it. I have never baked it with all the vegetables as well. I am glad I found this recipe as I am definitely going to try it this way. I am looking forward to tasting it with a bit of honey, that should bring on a whole other dimension to this fish.

This is such a healthy and tasty meal. Salmon is so good for you. Just try and make sure it is wild and not farmed or Atlantic salmon for the most nutrition. I normally take the skin off before I cook it. I have never had it turn out dry. Is there another reason for leaving the skin on? The honey, garlic sauce is amazing.
