Ingredients
- 2 piece of Fish cleaned and washed
- Salt and pepper for the rub
- 1 cup tomatoes minced or diced
- 1 cup onions diced
- 1 tablespoon ginger minced
- 1 tablespoon olive oil optional
- Salt and pepper to taste
- Soy sauce
- calamansi
Instructions

Preheat the oven to 200 C or 392 F.

Rub salt and pepper on both sides of the fish.

In a small bowl, mix together tomatoes, onions, ginger, olive oil, and salt and pepper.

Use a spoon or your hands** to put the salsa into the fish’s belly and mouth.

Now, wrap the fish in a piece of aluminum foil, separately.

Bake in the oven for approximately 30 minutes.

Remove from the oven and serve with hot rice.
