Soy Sheet Heart Roll
At my school, the Sushi Chef Institute, I host sushi workshops once a month. These workshops are for people who want to learn sushi in a nonprofessional capacity, and since we usually only have a couple of hours, I like to incorporate unique and fun activities. Most people know rolls, but they don’t know that rolls can be shaped into other things. This heart-shaped roll is simple to make but it always makes a good impression. I love to teach this roll to first-time sushi makers since it’s a great gift they can make for their loved ones. I hope to see you at my school someday so we can make and eat sushi together.

Ingredients
- 1/2 (7½ x 8” [19 x 20–cm]) sheet nori
- 3 ounces (85 g) sushi rice
- 1 stick imitation crab
- 1 piece cucumber
- 1 piece avocado
- 1/2 (7½ x 8” [19 x 20–cm]) red soy sheet
- 1 teaspoon wasabi paste, for serving
- 1 tablespoon (15 g) pickled sushi ginger, for serving
DIRECTIONS

Place the nori horizontally on a cutting board. With your knife, cut off one-third of the nori and save for another use.

Place the remaining two-thirds of the nori vertically on the board and cover with the sushi rice.

Turn over the nori, place the imitation crabmeat, cucumber and avocado in the middle and roll up the roll.

Place the red soy sheet over the roll so that only one edge is touching the cutting board.

Cover the roll with a makisu (bamboo mat) and press down with your palms while pressing in with your fingers to create a wave shape. From the side, it should look like half of a heart.

Cut the excess of the red soy sheet, moisten your knife blade with temizu and swipe the tip of your knife under the roll to separate it from the cutting board.

Cut the roll into four equal pieces.

Two pieces placed together will form the shape of an entire heart. Put your pieces on your serving plate and add the wasabi and pickled sushi ginger to the plate.
