I think these pistachio pudding "salads" are the greatest. I could eat the whole big bowl of it! I try to make it for family get-togethers or holidays, so I'll have to share it. I'll definitely be making it again in March(because it's green!)

I really love this salad! My "Granny" used to make this salad on special occasions in the spring. The color, texture, and coolness of this salad makes it very appealing. Plus, it's so easy to make! I make in the morning before I serve it. I put it in a beautiful crystal bowl, cover it with Saran Wrap, and chill. Right before serving is when I sprinkle the top with nuts. I use toasted pecans and walnuts. Anyone else try interchanging ingredients??
