Easy Blueberry Watermelon Salad
"You cannot celebrate summer without cold watermelon. I am going to show you how to make an easy Watermelon salad to enjoy on a hot summer day. You can whip up this Watermelon Salad in minutes with watermelon, blueberry, sugar, water, a lemon, and a pinch of salt. Begin by making a simple sugar using 1/4 cup sugar with 1/4 cup water. Heat it in a saucepan on the stove. Stir until the sugar has dissolved."

Ingredients
- 1 cup sugar
- 1 cup water
- 3 cups cold watermelon, balls
- 2 cups Blueberries
- 1 Lemon
- 1 teaspoon salt
- 8 mint leaves

Simmer sugar and water for a couple of minutes on the stove until completely dissolved.

The sugar will turn clear when dissolved. It only takes a couple of minutes.

Allow this simple sugar mixture to completely cool.

Add 2 cups Blueberries to a large bowl.

Use a melon baller and make 3 cups watermelon balls.

Add juice and zest of one lemon.

This watermelon salad looks so refreshing. I eat a lot of watermelon. I like the sound of this sugar syrup over it. Do yourselves a favor and add in some soft feta cheese, like Danish feta, to this salad. Watermelon and feta go extremely well together. There is something about the sweet and then the salty, creamy taste which makes it to die for!
