Texas Peaches with Fresh Mint & Almonds
This wonderful fresh peach recipe is best enjoyed with a big bowl of ice cream. Seasoned with fresh mint and mixed with Spanish almonds and a splash of Frangelico, the taste is unforgettable. The subtleties of almond in every bite is simply irresistible.

Ingredients
- 2 pounds fresh Texas peaches
- 1/2 cup fresh mint leaves
- 2 tablespoons Spanish almonds, sliced
- 1/2 cup Frangelico
- 2 pints Blue Bell vanilla ice cream
Instructions
- Wash, peel and seed peaches, then slice into thin pieces and set aside.
- Wash mint and gently slice, do not chop, into thin strips and set aside.
- Spread almonds onto a cookie sheet and toast in the oven for about 5 to 7 minutes.Remove almonds from oven and set aside.
- In a large bowl, combine the peaches, mint, almonds and Frangelico. Refrigerate for 4 hours until well chilled.
- Place a scoop of vanilla ice cream into a margarita glass or other serving dish, top evenly with peach mixture.
