Bacon Topping/German Potato Salad Sauce
The title says it all. This simple sauce can be ladled atop salad or beans, or used as a German Potato Salad sauce.

This recipe can also be used as a sauce in German Potato Salad.
Ingredients
- 1 teaspoon chicken soup base
- 1/2 cup onion, finely chopped
- 1/2 teaspoon white pepper
- 3 cups water
- 1 1/2 cup sugar
- 3/4 cup vinegar
- 1/8 teaspoon salt
- 1/2 cup flour
Instructions
1. Combine water, sugar, vinegar, salt, soup base and pepper. Heat till boiling.
2. Chop bacon and fry until brown. Skim out bacon with slotted spoon into water mixture. Fry onions in bacon fat until soft, but not brown.
3. Add flour to the onions; let it bubble up for 2 to 3 minutes. Add this onion mixture into the hot water mixture. Stir until smooth.
4. Serve over lettuce, green or wax beans.
