Hungarian Dumplings (spaetzle)
Ingredients
- If you don't have a Spaetzle maker it's a little difficult to make.
- It can be done by piping the dough out of a piping bag or by the
- old fashion way of scraping a thin layer of dough out on a cutting
- board then with a knife edge slicing off narrow cuttings and dropping
- them into the boiling water. This method takes A LOT of practice.
- 2 eggs
- 2 tablespoons oil
- 1/2 cup water
- 1/2 cup milk
- 2 1/2 cups flour
- 2 1/2 teaspoons salt
- 1/4 teaspoon baking powder
- 4 quarts water
Instructions
Using an electric mixer blend the eggs, oil, water and milk. Stir the flour together with 1/2 teaspoon of the salt and the baking powder in a dry bowl. Blend this mixture into the liquid. mix well and set aside for a moment. Bring 4 quarts of water to a boil and add the 2 teaspoons of salt. Using a Spaetzle maker or press squeeze the dough into the water. When the dumplings float to the surface they are done. Remove with a slotted spoon and drain in a colander. They can be served this way or pan fried with a little butter.
