Ingredients
- 1 head red cabbage (approximately 2 lbs)
- 4 tablespoons onions, finely chopped
- 3 tablespoons butter or 4 slices bacon
- 2 apples, sliced, OR 1 cup applesauce (more if unsweetened)
- 1/4 cup vinegar OR 1/2 cup red wine OR 2 tbsp honey and 2 tbsp vinegar
- salt and pepper, to taste
Instructions

Core, shred and soak cabbage in cold water.

Meanwhile, saute onion in butter or bacon.

Drain cabbage (leave moist), and simmer for 10 minutes.

Add sauteed onion/butter (or bacon), apples (or applesauce), vinegar (or wine or honey/vinegar) and season to taste. Mix well.
- Cover and simmer for 1 hour and 20 minutes. Add boiling water if necessary.
