During the summer months, zucchini is in abundance since it grows so easily. I found one in my garden last year at the end of the season that had been hiding behind the foliage. It was almost as big as my arm! I found that putting them on skewers makes them easier to flip and handle on the grill!

I love the look of this grilled lemon garlic zucchini. I love healthy recipes like this which are quick and easy. I would imagine that you could also do this egg plant on the grill. I would like to try that. I think cooked zucchini is really delicious and very versatile.
