Hobo Fish Packets
Whether you're looking for quick and easy dinner recipes, or you're out at a campsite cooking up some grub, or maybe just grilling out in the back yard, this fish recipe is perfect. You won't believe how easy these Hobo Fish Packets are to make. Plus so few ingredients are needed and the result is super flavorful!

The recipe can easily be doubled or quadrupled to make multiple fish packets.

Ingredients
- 2 pieces of small tilapia (or 1 large piece), defrosted
- 2 tablespoons lemon juice
- 1/4 cup white wine
- 1 tablespoon butter
- 1 tablespoon capers
- 3 small white (or red) potatoes, cut up into 2
- 1 cup of fresh green beans
- sea salt, to taste
- pepper, to taste
- foil
- PAM cooking spray
Instructions

Lay out 2 pieces of foil about 18 to 20 inches wide. Take 2 pieces of foil and lay on top of each other horizontally, overlapping slightly in the width to make it wider. This will be used to create the "packet".

Spray foil with PAM spray. Place tilapia in center of the packet. Place potatoes over tilapia. Put 1 tablespoon of butter on top of the fish and potatoes.

Add 1 tablespoon of capers and 2 tablespoons of lemon juice over top of potatoes. Fold up edges of foil slightly to keep liquid from seeping out.

Place green beans over the potatoes and add 1/4 cup of wine. Sprinkle with salt and pepper as desired. Fold each side of packet over (short side first), letting it overlap, and then fold long sides over to seal in all juices. Do not flip over.

If grilling, place in center of preheated grill on medium-low for about 30 to 35 minutes. Check after 30 minutes to see if potatoes are tender. If cooking in oven, preheat oven to 350 degrees F. Cook for 30 to 35 minutes until potatoes are tender. Serve dish while still in foil if desired.
