    Ingredients

    • 1/4 c kosher salt
    • 1/4 c Granulated garlic
    • 1/4 c whole peppercorns
    • 6 Bay leaves
    • 3 tbs. dry mustard
    • 2 tbs. cumin
    • 1 teaspoon cayenne
    • 1 teaspoon sage
    • 1 teaspoon ginger

    Instructions

    Crack pepper corns and grind bay leaves together in a coffee grinder. Mix all other ingredients in a bowl. After three hours of sitting, smoke over apricot wood. In the water pan put one bottle red wine, an orange sliced, one head garlic, one onion, a sprig of thyme and fresh sage.
