Nesselrode Pudding
Ingredients
- 1 envelope gelatin
- 1/4 cup sugar
- 1/8 tsp salt
- 2 eggs separated
- 1/4 cup milk
- 2 tsps rum flavour
- 1/4 cup sugar
- 1 cup whipped cream
- 2 Tbsp chopped cherries
- 3 Tbsp mixed fruit
Instructions
Mix gelatin, sugar and salt in top of double boiler. Beat egg yolks, add milk and add to double boiler and cook 5 minutes. Remove from heat and stir in 2 tsp rum flavour. Chill. Beat egg whites till soft peaks form, add 1/4 cup sugar. Fold in milk mixture. Fold in 1 cup whipped cream and set 1 hour. Stir in 2 Tbsp chopped cherries and 3 Tbsp mixed fruit.
