Pumpkin Pie Rice Krispie Treats

Ingredients
- 24 ounces mini marshmallows
- 5 tablespoons butter
- 6 cups Rice Krispie cereal
- 8 ounces mini marshmallow
- 3 tablespoons butter
- 1 teaspoon pumpkin pie spice, optional
- 3 cups Rice Krispies cereal
- orange gel food coloring

To make these simple pumpkin pie rice Krispie treats, start by generously greasing a muffin tin. Set it aside.

Next, you’ll want to make the “crust.” Place a large pot of medium heat and add the “crust” portion of marshmallows and butter.

Continuously stir until the marshmallows and butter are both melted and well combined.

Once melted, remove the pot from the heat and quickly add the “crust” portion of Rice Krispies. Mix well to combine and coat the cereal.

Use a cookie scoop to scoop the mixture into each muffin tin cavity.

Spray the bottom of a ¼ cup measuring cup or any other small cup with nonstick cooking spray.

Press the bottom of the cup into each cavity to make an indent similar to that of a pie crust. Set the pan aside.

Next, you’ll make the “pie filling” portion by melting the butter, mini marshmallows, and pumpkin pie spice in a large pot. Stir until melted and combined.

Turn off the heat and add in orange food coloring until you reach a color that resembles pumpkin pie.

Add in the Rice Krispies and stir until well combined.

Use the cookie scoop to scoop a portion of the “filling” into each prepared crust.

Use your fingers to press the filling into the crust so it’s firmly packed and flat

Allow the pumpkin pie Rice Krispy treats to cool for at least 1 hour before serving.

Top with whipped cream and a dash of pumpkin pie spice and enjoy!
