Ingredients
- 2 tablespoons butter
- 1 teaspoon garlic, finely chopped
- 2 tablespoons parsley, finely chopped
- 3 tablespoons parmesan cheese, grated
- 2 tablespoons butter, cut in pieces
- 1 cup fresh bread crumbs, (3 slice Italian bread)
- 24 fresh oysters, shucked
Instructions
- Preheat oven to 450 degrees F.
- In a heavy skillet, melt butter over moderate heat.
- When foam subsides, add bread crumbs and garlic.
- Toss 2-3 minutes until crisp and golden.
- Stir in parsley and grated cheese.
- Put oysters in shallow pan large enough to hold a single layer.
- Sprinkle crumbs on oysters.
- Dot the top with tiny bits of butter.
- Bake oysters in top third of oven at 450 degrees F for 12-15 minutes until the crumbs are golden.
- Juices in the dish should be bubbling.
- Serve at once as an antipasto or first course.
