I like the idea of using eggplant instead of zucchini in this lasagna recipe because I live in the Caribbean and eggplant is alot easier to find than zucchini. I'm not even sure that zucchini grows in this part of the world. Lasagna is such a tasty dish and reducing the carbohydrate content is a great way to make it healthier without compromising on flavor!

I love lasagna but can't eat the pasta. I love zucchini. So this recipe is definitely a keeper. I also love eggplant and thought I am sure that you could use eggplant in this recipe instead of zucchini. I will have to try it both ways. Either way, I'm sure it is going to be very enjoyable.

I'm glad I came across this recipe as I'm usually struggling to find something that my family might eat with the summer abundance of zucchini squash. It looks delish in the photo but I'm wondering about the texture of the zucchini after baking it. Does it get mushy or does it stay slightly firm?

Because, for various reasons, I try to stick to a low carb diet this recipe is something that I will definitely be making soon. In our house we all love lasagne so I know its going to be a hit. The use of the three different cheeses sounds delicious but I might replace some of the tomato sauce with a 1/2pkt of white sauce powder mixed into some cream for extra deliciousness!
