Guajolote (pavo) En Mole Verde
Ingredients
- 1 cooked small turkey, disjointed
- 10 ounces can tomatillos, drained
- 1/2 cup pumpkin seeds
- 1/4 cup blanched almonds
- 1 can peeled green chiles
- 2 cups rich chicken broth
- salt to taste
- 1/4 cup oil
- 1/2 cup minced parsley
Instructions
Turkey in Green Mole Sauce. Put tomatillo, pumpkin seeds, almonds, and chiles through blender or fine blade food grinder. Mix broth with ground mixture, add salt and simmer in hot oil for ten minutes. Now, add turkey, cook another 10 minutes, add parsley and cook 5 more minutes before serving. Serves 8 to 10.
