Ingredients

  • 2 cans (16 oz. each) La Preferida Refried Beans
  • 2 cans (10 oz. each) La Preferida Enchilada Sauce
  • 2 packages (12 each) La Preferida Corn Tortillas
  • 1 can (4 oz.) La Preferida Diced Green Chiles, drained
  • 1 1/2 pound ground beef, browned and drained
  • 1/2 cup shredded Cheddar or Muenster cheese

Instructions

  1. Preheat oven to 350 degrees F.

  2. Heat beans according to label directions.

  3. Pour two-thirds can of enchilada sauce into a 12x8x3-inch baking dish.

  4. Arrange 9 tortillas over sauce so they cover bottom and sides of dish.

  5. Spread beans over tortillas. Pour remaining one-third jar enchilada sauce over tortillas; top with beef. Add remaining tortillas to cover top evenly.

  6. Pour 1 can enchilada sauce over casserole, covering tortillas completly to prevent drying. Sprinkle with cheese. Bake 30 to 40 minutes.

What's this "'Loaded" Mexican Lasagna? Loaded with what? Now I know. it's loaded with the usual Mexican taco ingredients such as beans, enchilada sauce and chili. I really love the aroma of Mexican food.

I've found that some of the recipes supplied by food manufacturers are sometimes lacking in detail. The commenter below points out some problem points with this recipe. I think I might add some of the chilies to the ground beef as it's being cooked, then use the rest in the layer of the refried beans. It looks to have some good tastes and it's easy to prepare, but the recipe instructions definitely could use some editing.

This recipe sounds like it would taste pretty good but he directions need some tweeking. What do you do with the can of green chilis? Step 4 says to spread 9 tortillas over the bottom of the casserole dish and step 5 says to use the remaining tortillas. Really? One layer of 9 and then one layer of 15 tortillas?? something is wrong.
