It's best to put the sauce on them at the last minute and not drown them in it when you're using flour tortillas or they get all soggy. When you're working with flour tortillas that you have to roll, it's best to let them set out to get to room temperature. When they're cold, they tear and don't stretch. Even if you're not rolling them, they will separate from each other easier at room temperature. Cold, they stick together and pull layers off.
