Pineapple Sauce
Ingredients
- 1/4 c sugar
- 1 1/2 tablespoon cornstarch
- 13 ounces can crushed pineapple in light syrup, drained, syrup reserved
- 1/4 cup water
- 1 tsp grated lemon zest
- 1/2 tsp vanilla extract
Instructions
makes 2 cups. In a 1 1/2 quart microwave-safe dish, combine the sugar, and cornstarch. Mix well with a fork. Slowly add the reserved syrup to the sugar/cornstarch mixture, stirring well until smooth. Stir in the crushed pineapple, water, lemon zest and vanilla. Cover the dish (leave a small vent if you cover with plastic wrap) and microwave on HIGH (100% power) for 4 1/2 to 6 1/2 minutes, or until mixture thickens. Stir every 2 minutes.
