Apple Doughnut Muffin
Ingredients
- 1/3 cup shortening
- 1 1/2 cup sugar, divided
- 1 egg
- 1 1/2 cups sifted flour
- 1 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/2 cup milk
- 6 tablespoons melted butter
Instructions
Cream the shortening and 1 cup sugar. Add egg. Beat well. Mix and sift flour with baking powder, salt, and nutmeg. Add alternately with milk to egg mixture. Fill 12 greased muffin tins about two-thirds full. Bake at 350 degrees F. for 20 to 30 minutes, or until golden brown. Remove from pans at once. Roll in melted butter, then in mixture of remaining 1/2 cup sugar and the cinnamon. Makes 12 muffins.
