Banana Walnut Muffins

- 2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 3 large eggs
- 2/3 cup milk
- 6 tablespoons margarine, melted
- 1/2 cup firmly packed brown sugar
- 1/2 teaspoon vanilla
- 1 1/2 cup mashed bananas (2 to 3 ripe bananas)
- 1/3 cup chopped walnuts
Instructions
- Preheat oven to 400 degrees F.
- Sift together flour, baking powder, and salt. Set aside.
- Combine eggs, milk, and melted margarine in a bowl.
- Mix well, then beat in the brown sugar and vanilla.
- Add dry ingredients and mix slightly. Stir in bananas and nuts.
- Combine, but do not overmix; the batter should be lumpy.
- Divide among lined cupcake tins.
- Bake for 20 to 25 minutes or until toothpick comes out clean.
