Blueberry Muffins

Ingredients

  • 2 cups all purpose flour
  • 1/2 cup sugar
  • 3 tsps baking powder
  • 1/2 tsp salt
  • 1 cup fresh or frozen blueberries
  • 1 tsp grated lemon or orange peel
  • 3/4 cup milk
  • 1/3 cup oil
  • 1 egg, beaten

Instructions

Heat oven to 400. Grease bottom only of 12 muffin cups or line with paper baking cups. In medium bowl combine; flour, sugar, baking powder, salt, blueberries, and peel; Mix well. In a small bowl combine milk, oil, and egg. Blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. Fill prepared muffin cups 2/3 full. Bake at 400 for 18 - 22 minutes or until light golden brown. Cool 1 minute before removing from pan. Serve warm.
