Ingredients

  • 2 tablespoons vegetable oil
  • 2 cups frozen diced potatoes (hash browns)
  • 8 eggs
  • 1 cup Pace® Pico De Gallo
  • 4 ounces (about 1 cup) finely shredded Mexican cheese blend

Instructions

  1. Preheat the oven to 350 degrees F. Heat the oil in a 10-inch oven-safe nonstick skillet over medium heat. Add the potatoes and cook for about 3 minutes.

  2. Beat the eggs, pico de gallo and cheese in a medium bowl with a fork or whisk. Pour the egg mixture over the potatoes and cook for 3 minutes or until the eggs are beginning to set.

  3. Place the skillet in the oven and bake for 20 minutes or until the eggs are set. Cut the frittata into 6 wedges.

This is a really easy and tasty frittata recipe. It uses one of my favorite items, pico de gallo, and I usually add some more cheese on top just before it finishes baking. When I made this, I also sprinkled some crumbled bacon over the top along with the cheese, and it was absolutely delicious. I don't believe you can ever go wrong with adding bacon and cheese to things.

Frittata is one of my absolute favoritemeals. For a summer lunch and with a crunchy green salad a wonderfully flavorful frittata is sheer heaven. Pace Pico De Gallo isnt available in South Africa so a little improvisation was required but even so it turned out really tasty and I have added this to my recipe list of really nice dishes to make again in the future.

I'm definitely going to make this, it looks super easy and absolutely delectable. I never knew making frittata could be this easy. Usually preparing the filling is what takes the time. This recipe only takes 5 minutes to prepare. You can pack the kids lunches whilst this cooking.
