Sweet Pepper Sauce for Pasta
Ingredients
- 1 onion, minced
- 1 red pepper, diced
- 2 plum tomatoes, diced
- 1 Tbsp olive oil
- 2 cups plum tomatoes, peeled, seeded and run through a food processor
- salt and pepper
- 1 tsp marjoram, minced
Instructions
Cook the onion, red pepper, and diced tomatoes in the oil in a 2-quart pot until soft, about 5 minutes. Stir in the pureed tomatoes, capers, salt and pepper; bring to a boil. Cook 15 minutes. Fold in the marjoram. Serve hot over pasta.
