Chinese Pasta Primavera
Ingredients
- 1 pound linguine or any other pasta
- 1 medium red bell pepper, cut in strips
- 1 carrot, cut into thin strips
- 2 medium zucchinis, trimmed but not peeled, sliced
- 1/2 pound broccoli florets
- 1/2 pound fresh asparagus, cut in 1" pieces
- 1/2 pound whole sugar snap peas
- 6 green onion, sliced thin
- 1 clove garlic, minced
- 1 Tbsp butter
- 1 Tbsp olive oil
- 1/4 cup Chinese parsley, chopped
- 2 Tbsp Thai basil
- 1 Tbsp shoyu
- salt & pepper to taste
- 1/4 cup Parmesan cheese
- 2 Tbsp shoyu
Instructions
Cook pasta according to directions on the package. Meanwhile, heat the oil and butter in a wok. Add the garlic then all the vegetables, toss and cook about 1-2 minutes. Add salt, pepper, basil, parsley, pasta and shoyu. Cook 2 more minutes. Add Parmesan cheese, toss and serve.
