Creamy Pasta with Leeks

Ingredients
- 3 tablespoons olive oil or butter
- 4 medium leeks, cleaned and sliced into 1/2 inch strips
- Salt and pepper
- 6 ounces soft, mild goat's cheese
- 12 ounces Al Dente Pasta
- 1/2 cup chopped parsley
- 3/4 cup reserved pasta water or chicken broth
- Optional:
- toasted peanuts, smoked salmon, bacon or pancetta, baby spinach, chopped tomato or red bell pepper
Instructions
- Put butter or olive oil in a frying pan. Add the leeks and a teaspoon of salt, then cover with a lid.
- Cook over a low heat, stirring occasionally, for about 10 minutes, until soft and sweet.
- Add black pepper. Reove lid and continue cooking until leeks are tender.
- Stir in goat's cheese. Meanwhile, cook the pasta in a large saucepan with plent of salted, boiling water. Ladle out 3/4 cup of water and add to sauce to make a thick, but still runny sauce.
- Drain pasta and toss with leeks and parsley. Season to taste.
