Lemon Bell Pepper Pasta
Ingredients
- 1 Tbsp butter
- 1/4 cup extra virgin olive oil
- 2-3 Tbsp lemon pepper
- cayenne pepper to taste
- 1/2 cup diced red, yellow or orange sweet pepper (seeds removed)
- 1 ounce sliced mushrooms (fresh or canned)
- 1 teaspoon capers
Instructions
Makes 2-3 servings. Heat oil and butter in a sauce pan until the butter is melted, but not browned. Add Lemon and Cayenne Pepper, mix well Add remaining ingredients and simmer for approximately 10 minutes over a low heat. Toss with pasta of your choice, top with Parmesan cheese and serve hot!
