Low Fat Orzo with Roasted Garlic
Whether cooking pasta for a crowd or just making a simple pasta recipe for two, this recipe is a winner. Lose the fat and add big garlic flavor with this Italian pasta recipe.
Ingredients
- 1 head garlic
- 1 cup orzo pasta
- 1/4 cup reduced-fat chicken broth
- 1 1/2 tablespoon light margarine
- 1 tablespoon finely snipped fresh basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon freshly ground black pepper
Instructions
1. Tightly wrap garlic in foil and roast at 425 degrees F until very tender, 30 to 35 minutes.
2. Meanwhile, cook orzo according to package directions. Drain and keep warm.
3. Cut garlic head in half crosswise and squeeze out garlic pulp. Mash until smooth.
4. Heat broth, margarine, basil, oregano and pepper until margarine melts. Stir in mashed garlic and heat through, one to two minutes. Add garlic mixture to orzo. Toss into mix.
