Mom's Pasta Primavera
Mom's Pasta Primavera has been a family favorite for years. This pasta recipe is made with the freshest ingredients and has the earthiest flavor that is great any time of year. Tell you me how you like it and I'll let my mom know.
Ingredients
- 1/2 medium onion, minced
- 1 clove garlic, minced
- 1 pound asparagus, cut 1 inch thick
- 1/2 pound mushrooms, sliced
- 6 ounces cauliflower, broken up
- 1 medium zucchini, sliced
- 1 medium carrot, sliced and blanched
- 1 cup half and half
- 1/2 cup chicken stock
- 2 teaspoons dry basil
- 1 cup peas
- 2 ounces ham, chopped
- 5 scallions, sliced
- salt and pepper, to taste
- 1 pound spaghetti, cooked
- 1/2 cup Parmesan cheese, grated
Instructions
- Saute onion and garlic in butter. Add asparagus (or broccoli), mushrooms, cauliflower, zucchini, and carrot. Saute.
- Add half and half, chicken stock, and basil. Cook until slightly thickened.
- Stir in peas, ham, scallions. Season to taste. Toss everything with spaghetti and Parmesan cheese.
