Pasta Shrimp Luan
Ingredients
- 4 tablespoons butter; divided
- 2 tablespoons chopped green onions
- 1/2 cup sliced mushrooms
- 8 ounces small shrimp; (50-60 count)
- 2 tablespoons minced garlic
- 1 tablespoon chopped fresh parsley
- 1 teaspoon Cajun/Creole seasonings
- 1/4 cup fish stock
- 10 ounces fettuccine or linguini
- 1 tablespoon freshly grated Parmesan cheese
Instructions
Melt 2 tablespoons butter and saute green onion, mushrooms, shrimp, garlic and parsley over medium-high heat until the shrimp curl. Add Cajun seasonings and fish stock and simmer until reduced by half. Swirl in remaining butter until fully melted. Serve over heated pasta and top with Parmesan.
