Pasta with Spinach and Plum Tomato
Ingredients
- 1/2 bunch of spinach
- 5-6 plum tomatoes
- basil, oregano, Italian seasoning
- 2 cloves garlic, finely chopped
- fresh ground pepper
- 1-2 tablespoons olive oil
- 2 tablespoons water
Instructions
Chop spinach and place in a separate bowl. Cut and dice 3 plum tomatoes and place in a bowl with 1 clove of finely chopped garlic, basil, oregano and Italian seasoning, and pepper. Cut and dice other 3 plum tomatoes and place in a blender or processor. Add pepper, basil, Italian seasoning and oregano. Mix together until smooth and like sauce with bits of tomato. In a pan place olive oil, water and 1 clove of chopped garlic in pan. Cook at low-medium heat. Add diced tomatoes and more basil and Italian seasoning. Cook for 3 minutes. Add the plum tomato sauce and stir to even out the mixture. Let simmer & then add the chopped spinach, stirred moderately to blend in the spinach. Lower the heat and let the mixture simmer. Be sure not to let the color of the mixture become dim - you want the brightness of the red and green to show. Add the drained pasta to the pan. Mix and blend thoroughly.
