Turkey and Spinach Manicotti

Ingredients

  • 1 pound ground turkey
  • 1 box frozen chopped spinach, cooked and drained well
  • 1 pound box manicotti, cooked according to package directions (12 manicotti)
  • 1 pound ricotta cheese
  • 1 egg
  • salt and pepper
  • your favorite pasta sauce

Instructions

Preheat to 350. Mix ricotta with egg and salt and pepper. Brown turkey. Add to ricotta mixture. Add spinach. Spread a small amount of pasta sauce in bottom of baking pan, enough to lightly cover all the pan. Stuff the manicotti shells, using a small spoon or a pastry bag, with the turkey-cheese-spinach mixture. arrange all in pan. Cover with pasta sauce, then cover pan with aluminum foil. Bake for 30 minutes. Remove foil, cook for another 10-15 minutes.
