Ingredients
- 1/4 cup peanut butter
- 1/4 cup butter
- 1/2 cup flour
- 3/4 cup sugar
- 4 apples
- 1/2 teaspoon lemon rind, grated
- 2 tablespoons lemon juice
- 2 tablespoons water
Instructions

Preheat oven to 350 degrees F.

Cut the peanut butter and the butter into the flour and mix in 1/2 cup of sugar until crumbly.

Peel and slice apples in a 1 1/2 quart shallow pan (6" x 9 1/2" x 2"). Sprinkle lemon rind and 1/4 cup of sugar over apples; add lemon juice and water.

Cover apples with the crumb mixture.

I wish I had listened to my instinct on this one. Peanut butter and apples...yum. Lemons and apples...yum. But peanut butter AND lemons and apples...not so yum. I was skeptical about adding the lemon peel and juice, but followed the recipe as printed. I would not try it again. The peanut butter flavored "crisp" part was very good. Maybe try adding some vanilla to the water instead of using the lemon flavors, in my opinion.
