Lemon Chess Tarts
Ingredients
- 4 lg eggs
- 2 c sugar
- 1/2 c butter, melted
- 9 tb lemon juice
- 1 lemon, grated
- pastry lined tart pans
Instructions
Yield: 8 Servings. Heavy cream, whipped Fresh berries Preheat oven to 350F. Beat eggs enough to mix. Place sugar in large bowl and stir in melted butter. Add eggs and mix well. Stir in lemon juice and rind. Put generous tablespoons of batter into each uncooked tart shell, filling to about half full. Bake for 35 minutes or until firm and lightly brown. Top with whipped cream and garnish with fresh berries, if desired.
