Easy Coconut Cream Pie
This is one of the most fast and easy pie recipes out there! Easy, delicious and perfect for those who are on a budget, this Easy Coconut Cream Pie is wonderful.
Ingredients
- 1 1/2 cup coconut
- 1 1/2 cup sugar
- 1/2 cup milk
- 3 eggs
- 1 teaspoon Vanilla
- 1 (9-inch) pre-made graham cracker crust
Instructions
- Preheat oven to 350 degrees F.
- Put coconut In a bowl and add milk to it, let set until coconut soaks up the milk.
- Beat sugar and eggs together, then add vanilla.
- Add coconut to the egg mixture.
- Pour mixture into pre-made crust.
- Bake at 350 degrees F for 30 minutes.

I'm glad my pie wasn't the only one that never set. It was runny when I took it out of the oven but I thought it would firm up in the refrigerator. Never did:-( I may try it again and bake it for an hour.

Is this pie supposed to set up within the 30 minutes???> I have baked it for 40 minutes and it stilll hasn't set up. By the way, I used fresh shredded coconut. Does that make a difference/ Sharon Spangler

It does have good flavor-but was a Runny mess. I also tried cooking it for about another 30 minutes at a lower temp. Still not real firm.

This recipe is mis-named!! It is far from being a "cream pie". It should be named "Easy Coconut Custard Pie"! Also the baking time is way off. It should be 45 to 50 minutes. It is quite good!!

I made this pie for a New Years party. I was like kbolash 4430474 said. It would not set up and I just wanted to hide when a friend cut into the pie and it was all runny. One friend suggested I put it back into the oven for 30 more minutes because cooking time was not correct. After I did this the pie was very good, so the recipe cooking time should be at least 1 hour not 30 minutes. Please make this correction.

I made this for Christmas for the 1st time. After reading jackyd's comments about the firming up, I baked it about 7 minutes longer and after 2 days for refigeration, it was still "jiggly", but not bad. I took it the host's home (about 30 minutes away) and put it in the refigerator upon arrival. When he got it out approx. 4 hrs. later, it was like yellow soup and you could only see the coconut around the edges - it looked like a runny lemon pie. Sadly, we just threw it out. I re-read the ingredients numerous times while making it - did I do something wrong or was there a misprint in the recipe itself? I'd like to try this pie again, so I'm looking for suggestions. Thanks for your help.

For a couple in their 's to comment that this is the best coconut cream pie we ever tasted is quite a compliment I am sure Never had better - didn't change a thing - in fact when I took it from the oven at the appointed time I was concerned that the filling had not set up enough - my husband reminded me that I am always impatient when I have tried something new so I just waited - in about min when it had cooled sufficiently I cut a piece and thought immediately I had never tasted better - it did last over night but we sure cleaned it up the next day - I would love more of these very easy tasty recipes - thank you all so much - as re the not done pudding the remaining liquid was absorbed by the crust making it almost taste…Read More like candy
