Feijoa Cream Pie

Ingredients

  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 1 tsp vanilla essence
  • 1/2 tsp cinnamon
  • 3 large eggs
  • 5-6 large feijoas
  • 25 grams butter
  • 6 sheets filo pastry

Instructions

Blend sugar, sour cream, vanilla, and cinnamon . Add eggs and process. Peel and slice feijoas. Grease a pie plate and lay down a piece of filo with ends overlapping plate. brush with butter and repeat at different angles until filo is all used. Arrange feijoa slices in a single layer and pour over egg mixture. Fold over the ends of the filo and bake at 180 C for 30-35 mins or until pastry is golden brown and custard filling is set. Dust lightly with icing sugar just before serving.
