Mock Apple Pie
Ingredients
- Pastry for 2 crust 9 inch pie
- 36 Ritz crackers
- 2 cups water
- 2 cups sugar
- 2 teaspoons cream of tartar
- 2 tablespoons lemon juice
- Grated rind of one lemon
- 2 tablespoons butter or margarine
Instructions
Roll out bottom crust and fit into 9 inch pie pan. Break crackers coarsely. Combine water, sugar and cream of tartar in saucepan. Boil gently for 15 minutes. Add lemon juice and rind. Cool. Pour syrup over crackers, dot with butter or margarine and sprinkle with cinnamon. Cover with top crust. Trim and flute edges together. Cut slits in top crust to let steam escape. Bake at 425 degrees 30 to 35 minutes until crust is golden. Makes 6-8 slices.

I know this recipe has been around for a long time. I have never tried it, because I didn't think that it would taste like apple pie. I will give it a try. It just doesn't sound like it would be very good. I will make it for my family and not tell them what is in it and see if they can tell the difference.

My mother used to make this pie when I was growing up, and we always thought we were getting a real apple pie.
