    Ingredients

    • 4 eggs, slightly beaten
    • 1/2 cup sugar
    • 1/4 teaspoon salt
    • 1/2 teaspoon vanilla
    • 2 1/2 cups milk, scalded
    • 1/2 cup flaked coconut
    • 1 (9-inch) unbaked pastry shell

    Instructions

    1. Preheat oven to 350 degrees F.
       
    2. Blend eggs, sugar, salt, and vanilla. Gradually stir in scalded milk.
       
    3. Pour into pastry shell. Sprinkle with coconut.
       
    4. Bake for 35 to 40 minutes (until knife inserted halfway between center and edge comes out clean.) Cool on rack and then chill.
