Cornbread Pizza
Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/3 cup vegetable oil
- 1 egg, lightly beaten
- 1 cup milk
- 1 medium vidalia onion, thinly sliced
- 1 granny Smith apple, peeled and chopped
- 1 cup sausage, sliced
- 1 cup cheddar cheese, grated
- 1/3 cup blue cheese, crumbled
- 1/4 cup walnuts, chopped
Instructions
Preheat oven to 400 degrees F. Combine cornmeal, flour, sugar, baking powder, and salt in a medium bowl. Combine oil, egg, and milk in small bowl; mix well. Add milk mixture to flour mixture; stir just until blended. Pour (until it reaches 1 centimeter high) into greased 9 inch round pan. Use leftover batter for muffins, etc. Bake for 25 minutes or until wooden toothpick inserted in center comes out clean. Let cool; reduce oven temperature to 350 degrees F. Meanwhile, spray nonstick skillet with cooking spray. Heat over medium heat. Add onions; cook until onions wilt (about 8 minutes). Add apple. Cook until apple pieces are tender (8 more minutes). Add precooked sausage. Spread cheddar over cornmeal top, add apple sausage mixture. Scatter with blue cheese and walnuts. Bake until cheese melts and all ingredients are heated through (about 20 minutes).
