Mexican Pizza
Ingredients
- 1 lb. very lean ground beef
- 1 30 oz. can Rosarita Spicy Refried Beans
- 1/2 lb. grated sharp cheddar cheese
- 1 yellow onion, coarsely chopped
- 1/2 green bell pepper, coarsely chopped
- 1 head iceburg lettuce, chopped
- 1-2 tomatoes coarsely chopped
- 1 teaspoon black pepper
- 4 flour tortillas
- hot red sauce to taste
- hot green sauce to taste
- 1/2 cup corn chips, crushed coarsely
- Oil for frying
Instructions
Brown ground beef in a skillet, adding 1/4 chopped onion, pepper to taste, and hot red sauce to taste. Heat refried beans in a large sauce pan on low heat, adding chopped bell peppers, 1/4 chopped onion, and hot red sauce to taste, and keep beans on low heat with regular stirring until ready for preparation. Once meat and beans are ready, in a separate skillet, heat oil on high stovetop heat (about 1-2 cups usually sufficient) to fry each tortilla until barely crispy. Place fried tortilla on a plate and spread a layer of beans to cover entire tortilla. Place a layer of meat on top of beans then add cheese to taste. Place shredded lettuce on top of meat/cheese. Sprinkle tomatoes, cheese, uncooked onions, and tomatoes to taste. Sprinkle crushed corn chips last. Sprinkle hot red or green sauce to taste.
